Story

The life of the party, the instigator of frivolity, the undying entertainer. A modern-day jester gathers friends around regularly to eat and drink well, and much like their medieval predecessors, reminds us that life shouldn’t be taken too seriously.

Tasting Note

A lifted bouquet lemon curd, mandarin, yellow stone fruit and pineapple with saline nuances. The palate is driven by nectarine and fresh pear, followed by baked apple and hints of sage. A fine talc, mineral texture is backed up by soft edged, sherbet like acidity and a crisp finish. 

Winemaking

Picked in the cool of the night, destemmed, crushed and pressed to tank for one week’s cold settling. The juice is then racked, inoculated and cool fermented over 9 days to as low as 14˚C, capturing the delicate fruit characteristics. Once ferment is complete, the wine is stabilised and filtered before bottling.
